Beetroot Hummus You're Going to LOOOOVE
Not only is this fun variation on classic hummus perfect for Valentine’s day, the beetroot makes it a heart healthy option too. My beetroot hummus is so easy to prepare and is ideal atop crostini or as the focal point of a beautiful vegetable platter. Buon appetito!
Nutritional advantage: Beets are rich in folate (vitamin B9) which helps cells grow and function. Folate plays a key role in controlling damage to blood vessels, which can reduce the risk of heart disease and stroke.
ProTip: Wear ecofriendly gloves for cooking when handling the beets so your hands don’t turn a purple/red hue!
Yields enough to dip or top crostini for 4 people
INGREDIENTS
About 1 pound of roasted, peeled beets (you can purchase them ready.) I roast them in the oven covered in aluminum foil for 50-60 minutes at 350*F because it’s so easy and they taste better in my opinion.
3/4 can organic chickpeas, drained.
1 tbsp tahini
Juice from 1/2 a lemon
2 1/2 tbsp extra virgin olive oil plus 1 tbsp to drizzle
Sea salt and pepper to taste
Add 1-2 tbsp water depending on thickness
Whirl in a high speed blender and Enjoy! Top with 1 tbsp olive oil and chopped chives or sesame seeds if desired.
