Better Than Starbucks Egg Bites

Try out these just-like Starbucks Egg Bites for a healthy, protein-filled breakfast that you can enjoy on the go. This recipe comes together in just a few minutes with simple ingredients! Skip the Starbucks line, save your money and make this healthy breakfast at home. Plus, you don’t need a fancy sous vide machine. These are made in muffin tins in the oven! Add in your and your children’s favorite fillings (red pepper, herbs, turkey bacon, mushrooms, sautéed, zucchini with garlic, or spinach to name a few.) We like to freeze these in our Stasher Reusable Storage Bags and take out a few when we need them.

A two-egg bite serving provides 12 grams of protein, which is a nice way to help meet your daily protein needs. You can boost the protein even higher by mixing in some turkey bacon, chopped ham, or cooked breakfast sausage.

Pro Tip: For fluffy and moist Egg Bites, opt for full-fat cottage cheese, and blend it very well!

Better Than Starbucks Egg Bites

INGREDIENTS

PREPARATION

  1. Mist the cups of a silicone muffin pan lightly with cooking spray. Preheat the oven to 350℉.

  2. In a blender, blend together the eggs, cottage cheese, cheddar, salt, and pepper until smooth. (You can use a small blender for this.)  

  3. Divide the egg mixture into the cups of the muffin pan filling each about half full. Sprinkle with the chopped chives. This is where you can also add any other fillings.

  4. Bake for 20-22 or until muffins are slightly firm to touch in the center. Remove the muffin pan from the oven. The Egg Bites will be puffed up but they will settle down into the cups a bit after removing from the oven. Let the Egg Bites cool a few minutes before removing them from the pan to enjoy or to store for later.

  5. Store egg bites in an airtight container or Stasher Reusable Storage Bag in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Egg White Bites

INGREDIENTS

PREPARATION

  1. Preheat the oven to 350F and prepare a silicon cupcake mold by generously coating it with non-stick spray ( I love Primal Kitchen Avocado Oil Spray.)

  1. Next, prepare the veggies by finely chopping the roasted or raw red bell pepper and spinach. Set aside. 

  2. In a blender add in the egg whites, cottage cheese and mozzarella cheese and blend for 60 seconds. You want to really create a lot of bubbles here. 

  3. Then, place the silicon liner on a baking sheet and add in the veggies, then fill each cavity with the egg white mixture about 3/4 of the way full and sprinkle with salt and pepper.

  4. Fill the baking sheet with boiling water about 1/2 of the way full up to the liners, then bake for about 30-35 minutes or until the tops are firm the the touch. 

  5. Let cool for about 5 minutes before removing from the mold and enjoy warm! 

  6. Store egg bites in an airtight container or Stasher Reusable Storage Bag in the refrigerator for up to 5 days or in the freezer for up to 3 months.
