Better Than Traditional Caesar
Guilt-Free Charred Caesar Salad (topped with grilled shrimp or chicken)
this must try salad is One of our favorite and easiest weeknight meals (or complement to a weekend meal.)
After experimenting with several homemade dressings, i’ve perfected this Caesar! Garlicky flavor and decadent texture! Try charring the romaine on the grill or it can be done carefully on a gas stove open flame. The char adds an incredible nuttiness to the lettuce I never knew existed! Yields enough for two adults
Caesar Dressing INGREDIENTS
3/4 cup non-fat plain Greek yogurt
1/2 cup freshly grated Parmigiano Reggiano
3 TBSP cold pressed extra-virgin olive oil
3 TBSP freshly squeezed lemon juice
2 anchovy fillets (even if you don’t like anchovies, their flavor really adds a wonderful dimension, & you can't taste them-promise!)
1.5 TSP Dijon mustard (don’t substitute mustards)
1 large garlic clove (I use two since they’re so good for you!)
Sea salt & freshly ground black pepper
PREPARATION
Place all ingredients in a high speed blender or food processor. Puree until smooth. *I usually store it in an airtight mason jar, in the fridge, for up to a week.
Pour over charred romaine lettuce and toss. I add in some regular, chopped romaine to add that crispiness factor I enjoy in a salad. The different textures from the crisp romaine, the charred romaine, and the creamy dressing are wonderful together.
Top with grilled, sautéed, or baked shrimp or chicken. Garnish with freshly cracked pepper.
