Lemon Chicken Bites
These lemon chicken bites are simple, fast, and perfect for those of you who are always strapped for time! This is a light and healthy dish, perfect for weeknight meals. It requires minimal ingredients- you probably already have them in your pantry- and in just a few steps your chicken will come out moist with a lemony sauce you’ll want to lick off your plate!

Lemon Chicken Bites
Yields 6 servings
Ingredients
1 1⁄2 lbs organic chicken breast, cut into 1 1/2 inch cubes
2 cups regular flour or gluten free all purpose flour. Gluten free white rice flour works well too.
Salt and pepper to taste
3 tablespoons extra virgin olive oil
2 whole cloves of garlic
A few sprigs of fresh thyme
Freshly squeezed juice of two lemons (approx. half a cup)
1/2 cup Sauvignon Blanc, Pinot Grigio, or Chardonnay
Preparation
Pat the chicken breasts dry with a paper towel before cutting them into 1 1/2 inch cubes.
Sprinkle the chicken cubes with salt and pepper.
Dredge the chicken into the flour.
Heat olive oil in a large skillet over low heat and add in the garlic and thyme to infuse the oil for one minute. Remove the garlic and thyme. Turn up the heat to medium, never turning it on high because olive oil has a low smoke point.
Add chicken pieces to the pan, one by one.
Turn each chicken piece over with a fork once completely browned on one side.
Once chicken pieces are browned on all sides, about 8 minutes, add white wine to the pan.
Once wine has almost entirely evaporated, add in lemon juice. Stir chicken a few times until sauce begins to thicken and lemon juice is almost fully absorbed. Make sure a little bit of sauce remains in the pan so that the chicken doesn’t dry out. It should be moist, with a bit of sauce still remaining.
Serve with a wild rice pilaf and garlic roasted broccoli or with my GetFitMom roasted lemon asparagus.
