Summer Breakfast Parfait
Nothing screams summer and patriotism like this red white and blue beauty.
A great way to start your day, you can make the night before - especially great when knowing you’ll be heading out the door early and need a quick-but-healthy breakfast choice.
All you’ll need is:
a wide mouth mason jar with a plastic lid (amazon sells these)
raspberries, blueberries, strawberries (organic-yes it makes a difference)
your favorite plain yogurt (I love 0% Greek yogurt or SoDelicious vegan yogurt)
flax & chia seed combo from TraderJoes
raw bee pollen, stevia packet or raw honey (optional),
granola (I love Kind, Simply Elizabeth or Sakara Life)
Then simply layer it up!
Starting with ¼ cup yogurt, then a bit of stevia or honey, ¼ cup granola, a few smaller berries, repeat 3 times ending with a sliced strawberry topper! Sprinkle the flax & chia seeds and 1 tsp. bee pollen.
And there you are - a quick-but-simple breakfast option for the days you’re busy, but still aiming (as always) to keep it healthy.
