Zucchini "Papardelle" with "Fit Pesto"
Ever have vegetable anxiety? By that I mean, having too many veggies and not know what to do with them?
This past spring we moved into our new house and I immediately built our edible garden. In such an immature garden, I was never expecting the bounty that ensued mid summer.
When my two boys went into our edible garden to grab some basil for their mama, to my astonishment, they returned with 3 enormous zucchini! I panicked not knowing what to do with so much and not wanting to waste them. Thankfully, my creative juices started flowing on ways to incorporate them into healthy, dishes the whole fam can enjoy.
Here is one of my favorite, simple, and satisfying recipes for you to try when you find yourself with too many zucchini or are in need of a new preparation.
Fit Papardelle Ingredients:
4-5 zucchini, thinly sliced length wise with a peeler or mandoline (mimics papardelle pasta)
1 cup mini cherry tomatoes halved
Fit Pesto INGREDIENTS:
1 cup packed fresh basil leaves
Half large ripe avocado
2 cloves garlic
2 tbsp pine nuts or walnuts
1 tbsp fresh lemon juice
3 tbsp water plus more if necessary
1/4 cup grated parmigiano reggiano
Course salt to taste
PREPARATION:
1)Make your Fit Pesto in a high speed blender (I use the vitamix ascent a3500) or food processor by blending the above Fit Pesto ingredients.
2)In a pan, with a drizzle of olive oil, heat up & lightly blister your halved cherry tomatoes, mixing every few minutes for about 10-12 minutes.
3)in a large bowl, Add in your fit papardelle and pesto, combining them well. Transfer your papardelle to a serving platter and top with the blistered tomatoes. Serve immediately or can sit for an hour before serving. Buon appetito!
